Updates from New Zealand! 🌍🌊📧

It's been a while since I shared what I've been listening to, reading and doing whilst I have been in New Zealand, so here's a few updates including a summer salad recipe which is delicious!

Is a really interesting read on rewiring your brain which often defaults to the 'negativity bias' and how we can use mindfulness to bring us back to a more positive outlook.

What I've been up to in New Zealand!


I've been busy doing some extra training in pelvic health physio (a weekend in Auckland below!) as well as finishing my dissertation for my masters and keeping up all the admin, website and emails ticking along with classes in the UK- as well as working my normal physio job here!


We've managed to explore plenty of beautiful beaches and hikes and started park run at weekends too.

Summer salad recipe

This one was shared with me at a course for work in Auckland and it was delicious!


1 cup French lentils – cooked until just done (soft but not squishy)

1 cup quinoa – cooked until just done (little ‘tails’ appear)

1 cup pomegranate seeds (summer) or dried cranberries (winter)

2 coloured peppers chopped (summer) or 1 C roasted butternut pumpkin cubes (winter)

½ cup raisins

½ cup chopped coriander

½ cup chopped parsley

4 Tbsp finely chopped capers Juice of 2 lemons

3 - 4 Tbsp olive oil

Salt and pepper to taste

½ cup toasted pumpkin seeds

¼ C toasted pine nuts


Mix all together and check taste is good, adjust as necessary. If making ahead of time, hold off adding the nuts and seeds until serving to ensure they are still crunchy.
