As the summer continues and we need a quick and healthy option here is a salad recipe (kindly provided by my yogi Jackie!). I love new recipes so do let me know any of your favourites and I will share them.
Prep time: 10 minutes
Ingredients
Packet mixed salad
1/2 red green and yellow pepper chopped up
1/2 cucumber cubed
Cherry tomatoes cut in half
1/2 or whole if small avocado sliced
1/2 red onion sliced thinly (optional)
Olives with feta cheese in a container in deli section in supermarkets use whole container
4 radishes chopped
Small tin of sweetcorn - drained
Method
+Empty salad leaves in large round dish
+Next add cucumber peppers radishes tomato’s avocado olives with feta onion sweetcorn
+Use a good balsamic vinegar and olive oil for dressing
+Don’t mixed it altogether because will go mushy!
Options- add hard boil eggs/a tin of tuna/chickpeas instead of feta cheese if you are vegan
