Hearty pea and mint soup recipe

I love making soups. They are so easy to make, and are great for a healthy winter lunch. Here's my first (and easiest) soup recipe. Many of you have tried out the winter warmer tray bake and loved it. I've received lovely feedback including 'It was yummy' and 'We really enjoyed it'.

Tip:

Make a big batch and freeze it.



Prep time: 5 minutes! (honestly)

Cooking time: 20 minutes

Serves: x4 bowls


Ingredients

-A bag of frozen peas (approx. 500gs)

-A packet of fresh mint

-Mixed herbs

-x1 Bag of 500g spinach (can be left out but a great way to get more greens to your diet)

-1 White onion

-Oil/butter for frying

-2 Cloves of garlic

-x1 stock cube

-500ml of hot water


Optional extras

-Natural or Greek yoghurt (X3 dessert spoons or more to thicken)

-Cheese (parmesan or cheddar)


1- Peel and chop the onion and two cloves of garlic into small pieces

2- Add a tablespoon of oil or butter to a frying pan and heat up

3- Once the pan is hot, add the onion and garlic and allow to cook until soft and brown

4- Add the frozen peas into a separate saucepan with the stock and hot water

5- Stir and bring to the boil and simmer for 5 mins

6- Add the spinach to the peas a handful at a time, allowing the spinach to soften and boil down

7- Add the onion and garlic into the saucepan with the peas and spinach

8- Chop the whole packet of the fresh mint and add to the soup

9- Add x3 dessert spoons of natural yogurt to the mixture (you can always add more at end to increase the thickness of the soup)

10- Grate parmesan cheese into the soup (to your taste)

11- Transfer the soup to a blender and blend to a smooth soup

12- Once blended to a thick soup, transfer back to your pan and heat up

14- Serve into a bowls and garnish with a spring of fresh mint to finish
