Dates are great for iron and a natural sweetener. This loaf is great if you have a sweet tooth but just need a healthy fix! It lasts 5-7 days in the fridge after too and theres plenty of it.
Prep time: 10 minutes
cooking time: 30-35 minutes
You will need:
-225g stoned dates - each date cut in half
-1 cooking apple (or x2 small apples - any variety just not red!) - chopped into small cubes
-150ml water
-6oz of butter
-12oz rolled oats
-1 teaspoon ground cinnamon
Method:
Heat the oven to 190/Gas mark 5 and line a loaf tine. You can use a sqaure cake tin
Place the chopped dates, apple and water in a pain and bring to the boil. Simmer for 5 minutes so that it looks like a soft pulped mix. Remove from the heat
Use a separate pan and melt the butter, and then stir in the oats and cinnamon
press half the mixture into the prepared tin
Spread the date puree/mixture on top with the remaining oat mixture. press down firmly
Bake in the oven for 30 minutes
Leave to cool in the loaf tin for 5 minutes then take out and leave to cool
cut into slices and enjoy!
